I had some almond flour that I absolutely needed to use and immediately wanted to make something simple and fragrant. That’s how these soft orange cookies were born: large, fluffy and incredibly delicious.

These orange cookies with almond flour are perfect for those who love simple yet rich treats. Slightly moist inside and perfect for dipping in milk, tea or coffee. They are ideal for breakfast, as a snack or as a little indulgent moment during the day.

Ingredients

  • 2 3/4 cups all-purpose flour (the one you usually use)
  • 1 1/2 cups almond flour
  • 3/4 cup butter (soft)
  • 1 cup sugar
  • 2/3 cup milk
  • 3 eggs
  • 1 egg yolk (for brushing)
  • 1 packet baking powder
  • orange zest
  • 1 pinch salt
  • 1 cup almonds (optional)

Steps

  • In a bowl combine all-purpose flour, almond flour, baking powder and salt.

  • In another bowl cream together the soft butter, margarine and sugar until creamy.

  • Incorporate the 3 eggs one at a time, then add vanilla and orange zest. Pour the milk little by little and add the flour mixture. Knead until you obtain a soft but workable dough.

  • If you prefer, add the chopped almonds. Shape into 3–4 logs on a baking sheet lined with parchment paper. Brush with the yolk slightly thinned with a splash of milk.

  • Bake in a conventional oven at 356°F for about 25–30 minutes. Remove from the oven, let cool for 10 minutes and slice the logs into cookies about 1¼–1½ inches thick.

  • Return to the oven for about 5 minutes.
