  • 1 2/3 cups durum wheat flour (or the flour you usually use)
  • 4 tablespoons Genovese pesto
  • 3.4 fl oz (about 1/3 cup + 1 tbsp) water
  • 1/2 packet (about 2 tsp) instant baking powder for savory preparations

Steps

  • Pour the flour and the baking powder into a bowl, add the pesto (I used the ready-made one I had in the fridge) and add the water little by little.

  • Mix and continue adding water until the dough comes together.

  • Move to a floured work surface and knead well until you obtain a smooth, homogeneous dough that doesn’t stick to your hands.

  • Roll out on the floured surface and cut into pieces of the size you prefer — I made about 24 pieces.

  • Once cut, roll them out a little more so they get crispier. Arrange them on a baking sheet lined with parchment paper and bake in a hot convection oven at 392°F for about 8-10 minutes.

  • They should turn golden; if they start coloring too much lower the oven to 356°F, especially if you put in two trays as I did.
