To enrich them further, you can add walnuts or raisins to the batter, according to your taste. They keep for 2-3 days, retaining their texture. Ingredients

  • 1 egg
  • 1 1/3 tbsp vegetable oil
  • 3.5 oz (about 0.4 cup) ricotta
  • 3 oz (about 0.4 cup) sugar
  • 3.5 oz (about 3/4 cup) all-purpose flour
  • 1/2 packet baking powder
  • 2 teaspoons ground cinnamon
  • juice and grated zest of 1/2 lemon
  • 1 large apple (or two small apples)
  • a pinch of salt

Steps

  • Wash, peel and cut the apple into small cubes. Place them in a bowl with the lemon juice, 1 tablespoon of sugar and the cinnamon. Keep a few apple slices aside for decoration (optional).

  • In a bowl, lightly beat the egg with the sugar. Add the grated lemon zest, the oil and the ricotta previously passed through a sieve. Mix well until you obtain a homogeneous mixture.

  • Sift the flour with the baking powder and a pinch of salt. Combine the dry ingredients with the wet ones, gently mixing with a spatula until there are no more lumps.

  • Finally, add the apple cubes (well drained of their juice) and fold gently to incorporate them into the batter.

  • Spoon the batter into paper liners, filling them to about two-thirds of their capacity. Decorate the muffins with the thinly sliced apple wedges and sprinkle the surface with a little sugar (brown or granulated).

  • Transfer to a preheated oven at 338°F and bake for about 25-30 minutes, or until evenly golden. Once baked, remove the apple and cinnamon muffins from the oven and let them cool completely before serving.
