Ingredients
- 1 egg
- 1 1/3 tbsp vegetable oil
- 3.5 oz (about 0.4 cup) ricotta
- 3 oz (about 0.4 cup) sugar
- 3.5 oz (about 3/4 cup) all-purpose flour
- 1/2 packet baking powder
- 2 teaspoons ground cinnamon
- juice and grated zest of 1/2 lemon
- 1 large apple (or two small apples)
- a pinch of salt
Steps
Wash, peel and cut the apple into small cubes. Place them in a bowl with the lemon juice, 1 tablespoon of sugar and the cinnamon. Keep a few apple slices aside for decoration (optional).
In a bowl, lightly beat the egg with the sugar. Add the grated lemon zest, the oil and the ricotta previously passed through a sieve. Mix well until you obtain a homogeneous mixture.
Sift the flour with the baking powder and a pinch of salt. Combine the dry ingredients with the wet ones, gently mixing with a spatula until there are no more lumps.
Finally, add the apple cubes (well drained of their juice) and fold gently to incorporate them into the batter.
Spoon the batter into paper liners, filling them to about two-thirds of their capacity. Decorate the muffins with the thinly sliced apple wedges and sprinkle the surface with a little sugar (brown or granulated).
Transfer to a preheated oven at 338°F and bake for about 25-30 minutes, or until evenly golden. Once baked, remove the apple and cinnamon muffins from the oven and let them cool completely before serving.
