Ingredients
- 1/2 cup yogurt (natural or flavored, as desired)
- 3/4 cup + 2 tbsp sugar
- 3 eggs
- 3.4 oz vegetable oil
- 2 cups all-purpose flour
- 1 sachet baking powder (for cakes)
- a pinch of salt
- Grated lemon and orange zest
- as needed powdered sugar (for decorating)
Steps
In a large bowl, beat the eggs with the sugar and a pinch of salt until you obtain a pale and frothy mixture.
Slowly pour in the oil and then add the yogurt. Add the grated orange and lemon zest, and sift in the flour and baking powder.
Gently mix with a spatula until you get a smooth batter without lumps. Transfer the batter into a previously buttered and floured pan or lined with parchment paper (9×9 in).
Level the surface with a spatula and bake the cake in the oven at 356°F for about 25-30 minutes, or until evenly golden. Always perform the toothpick test to check doneness, as baking times may vary depending on the oven.
Remove the yogurt cake from the oven and let it cool completely. Before serving, if desired, dust with powdered sugar and cut into squares.
