Soft almond and hemp cookies, tender little cookies made with almond flour and a small percentage of hemp flour, with a delicate flavor and a pleasant, soft texture. This type of flour is rich in protein and is great in the kitchen for many preparations. So don’t be skeptical — it’s a versatile food that’s good for our bodies. Ingredients
- 1 egg white
- 1 1/8 cups almond flour
- 1 tbsp hemp flour
- 1/4 cup granulated sugar
- almond extract
- to taste powdered sugar
Steps
Preparing the almond cookies with hemp flour:
Mix the almond flour, hemp flour and sugar together in a bowl.
Add the egg white (no need to whip it in this case), the almond extract and mix all the ingredients until you obtain a well combined dough.
With moistened hands, take pieces of dough of about 3/4 oz each (about 20 g) and roll them into balls (it’s normal for the dough to be a little sticky).
Roll each ball in a bowl of powdered sugar, fully coating them, and place them spaced apart on a baking sheet lined with parchment paper.
Flatten them slightly, pressing a finger in the center, and transfer the baking sheet to an oven preheated to 356°F. Bake for 10 minutes, no more.
Remove from the oven and let cool completely on a wire rack. The soft almond and hemp cookies are ready to be enjoyed.
