Ingredients
- 1 1/4 cups ricotta
- 3 eggs
- 1 cup granulated sugar
- 1/4 cup (4 tbsp) vegetable oil
- 3 tbsp + 1 tsp (about 1.7 fl oz) Alchermes liqueur
- 2 cups all-purpose flour (00)
- 3/8 cup (about 6 tbsp) potato starch (fecola)
- 1 packet baking powder
- vanilla extract
- 3.5 oz (about 2/3 cup) dark chocolate chips (or chopped dark chocolate)
- a pinch of salt
Steps
In a large bowl, whisk the eggs with the sugar and a pinch of salt until combined. Add the vanilla extract, the Alchermes and the oil in a thin stream. Sift the ricotta to make it smoother and creamier, then add it to the batter.
Mix well, then add the sifted flour together with the baking powder and the potato starch.
Finally, fold in the dark chocolate chips (or chopped chocolate) and stir with a spatula to distribute them evenly through the batter.
Pour the batter into a 10.25-inch bundt pan (previously buttered and floured) and level the surface with a spatula.
Bake the cake in a preheated oven at 356°F for about 40 minutes, or until the top is golden and a skewer inserted in the center comes out clean.
Once baked, remove the bundt cake from the oven and let it cool completely. Dust with powdered sugar or decorate as desired.
