Coconut and Nutella truffles, an easy, quick and indulgent recipe. These are small spherical sweets made with just a few ingredients and ready in a matter of minutes without an oven, so no cooking required. They can be flavored by adding a little liqueur, such as rum or Baileys, and are simply irresistible. Ingredients
- 7 oz cocoa sandwich cookies (e.g., Pan di Stelle (about 2 cups crushed))
- 7 oz Nutella®
- 3-4 fl oz milk (about 1/3–1/2 cup)
- 1 tbsp unsweetened cocoa powder
- to taste grated coconut (desiccated)
- 1 tbsp liqueur such as rum (optional)
Steps
Finely chop or crush the dry cocoa cookies in a food processor and set them aside.
Pour the milk and the spread into a bowl and, if desired, add a tablespoon of rum (or another liqueur).
Work the ingredients with electric beaters until you obtain a smooth, liquid mixture (start with 3 fl oz of milk and add more only if needed, toward the end, after adding the other ingredients).
Add the previously crushed cookies to the bowl, one tablespoon of cocoa powder and two tablespoons of grated coconut.
Mix everything well until you have a uniform, compact mixture. Use your hands to take portions of the dough and form balls of the same size.
Roll them, one at a time, in a bowl with the desiccated coconut so they are completely coated.
Place the balls into paper cups and arrange them on a tray. Let the sweets firm up in the fridge for at least 30 minutes before serving.
