Kefir plumcake with dark chocolate chips made using only egg whites and a fermented milk beverage (kefir, a probiotic food rich in beneficial properties). This chocolate chip plumcake is easy, quick, tasty and particularly soft. Kefir is a great alternative to make your desserts fluffier and it is also low in lactose but, if you prefer, you can substitute it with plain yogurt. Ingredients
- 2/3 cup kefir
- 3/4 cup granulated sugar
- 2 cups all-purpose flour
- 6 tbsp potato starch
- 5 egg whites egg whites (about 5)
- 1/2 cup vegetable oil
- vanilla extract
- 1 tbsp baking powder
- a pinch of salt
- 1/2 cup dark chocolate chips
Steps
Whip the egg whites to stiff peaks in a large bowl, gradually adding the sugar.
In another bowl, mix the oil with room-temperature kefir, the vanilla extract and a pinch of salt. Sift the flour, potato starch and baking powder directly over the mixture.
Gently fold the previously whipped egg whites into the batter using a spatula from the bottom upward and also add the dark chocolate chips.
Pour the batter into a buttered and floured 12-inch loaf pan, level the surface and transfer to a preheated oven at 338°F.
Bake for about 35-40 minutes, performing the classic toothpick test (it should come out perfectly dry).
Remove from the oven, let cool and then unmold the cake, turning it out onto a serving plate.
