The lemon muffins are simple, super soft and delicious treats that are quick to make and don’t require much skill. Simply mix all the ingredients in a bowl (no need to whisk the eggs) and spoon the batter into paper liners for cupcakes/muffins. After baking you can also enrich them, for example, with pastry cream, inserting it from the base with a syringe or a piping bag. If your batter is too thick, adjust it by adding a few tablespoons of milk. Usually you should not work the batter too much for muffins, otherwise you’ll risk obtaining treats that are anything but soft. In short, the more you work the batter the chewier your muffins will become. Below, we see together what is needed to prepare these tasty and fragrant lemon muffins:

Ingredients
- 1 1/3 cup all-purpose flour
- 1/2 + 2 tbsp cup granulated sugar
- 1/3 cup cornstarch
- 2 1/2 tsp baking powder
- 1 egg
- 1/4 cup vegetable oil
- 3 1/4 tbsp lemon juice
- 2 tbsp limoncello
- 1/3 cup plain yogurt
- a pinch of salt
- grated zest of one lemon
Steps
With the help of a whisk, mix the egg with the sugar, the grated lemon zest and a pinch of salt in a bowl.
Slowly pour in the oil, the lemon juice and the limoncello, add the yogurt at room temperature and combine.
Sift the flour with the cornstarch and the baking powder and add them, a little at a time, to the batter, avoiding lumps.
There is no need to overwork the batter; otherwise, once baked, the muffins may turn out rather chewy.
Fill the muffin liners with the prepared batter, leaving about 1 cm (about 3/8 in) of space from the edges, as they will rise during baking.
Preheat the oven to 356°F and bake the muffins for 15–20 minutes. When the time is up, remove them from the oven (always perform the classic toothpick test) and let them cool.
Your super soft lemon muffins are ready to be served plain or filled as you like.
