Ingredients
- 3 eggs
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1/3 cup all-purpose flour
- 1/4 cup potato starch
- 2 teaspoons baking powder
- 2.5 oz chopped pistachios (unsalted)
- 2.1 oz chopped almonds (unsalted)
- 1/2 cup pistachio spread
- a pinch of salt
- vanilla extract
Steps
Whip the eggs in a large bowl with the sugar and a pinch of salt until you obtain a light and frothy mixture. Add the vegetable oil in a thin stream, the pistachio spread and the vanilla extract, mixing until you have a homogeneous batter.
Combine the sifted flour with the potato starch and the baking powder. Add the chopped pistachios and almonds and mix well.
Pour the batter into the molds (these are flower-shaped with a diameter of about 2 3/8 inches) previously buttered and floured, leaving a bit of space (about 3/8 inch) from the edges.
Bake the mini cakes in a preheated oven at 338° F and cook for about 18-20 minutes, performing the toothpick test.
Remove from the oven and let cool. Then transfer them to a serving platter. Serve the pistachio mini cakes as they are or decorate them with a little powdered sugar, pistachio spread and a few pistachios.
