The ricotta and apple cake is a fragrant, very soft dessert and very simple to make. With small pieces of apple and raisins tucked into a tender, butter-free cake, it has always been one of my favorites. It keeps for up to 3 days at most, preferably under a glass dome. You can serve your cake plain or with lightly sweetened whipped cream or vanilla ice cream. The only suggestion I can give is to save this recipe and try it: I bet you won’t stop making it?! Ingredients
- 2 eggs
- 3/4 cup + 2 tbsp granulated sugar
- 2 2/3 tbsp vegetable oil
- 3/4 cup ricotta (well drained)
- vanilla extract
- grated zest of one lemon
- juice of one lemon
- 2 apples
- 1 1/3 cups all-purpose flour
- 1/4 cup cornstarch
- 1 packet baking powder
- 1/3 cup raisins
- as needed powdered sugar (for decoration)
Steps
Peel and cut the apples into small dice, removing the core and keeping a few thin slices aside for the final decoration. Sprinkle with the lemon juice and proceed with preparing the cake.
Beat the eggs with the sugar in a bowl, add the vanilla extract, the grated lemon zest and the oil in a thin stream.
Once you have a light and frothy mixture, add the well-drained ricotta, passed through a sieve or mashed (to make it smoother and creamier).
Add the flour sifted together with the cornstarch and the baking powder, work everything well and fold in the diced apples (drained from the lemon juice) and the raisins (previously soaked, well squeezed and tossed in a little flour).
Butter and flour a 22-24 cm (about 9-inch) cake pan and pour in the batter, leveling the surface with a spatula.
Finally, decorate with apple slices about 1/4 inch thick, arranging them in a circular pattern on top of the cake.
Bake the cake in a preheated oven at 356°F for about 45 minutes, performing the toothpick test (it should come out dry).
Remove from the oven and let cool completely. The ricotta and apple cake is ready to be served, dusted with a little powdered sugar if desired.
