Ingredients
- 1 2/3 cups all-purpose flour
- 1/3 cup potato starch
- 7/8 cup granulated sugar
- 2/3 cup Greek yogurt
- 1/3 cup milk
- 3 eggs
- 1/2 cup vegetable oil
- 2 tbsp instant coffee
- 1 packet baking powder
- a pinch of salt
- 5.3 oz dark chocolate
- 3 1/2 tbsp butter
- as needed coarse sugar crystals
Steps
Prepare the batter by beating the eggs in a bowl with the sugar and a pinch of salt until light and frothy. Add the oil in a thin stream, then the yogurt and the instant coffee dissolved in the milk.
Fold into the mixture the flour sifted together with the potato starch and the baking powder. Pour the batter into a buttered and floured colomba mold and bake in a preheated oven at 356°F for about 35 minutes, or until a skewer inserted into the center comes out clean.
Let cool completely and, meanwhile, prepare the glaze. Melt the dark chocolate and butter in a double boiler or in the microwave. Stir well until you obtain a smooth, glossy mixture.
Once the cake is cold, transfer it to a wire rack, pour the chocolate coating over it and, before it sets, sprinkle the coarse sugar crystals on top.
Once the glaze has set, the coffee Colomba cake covered in dark chocolate is ready to be served!
