Ingredients
- 2 1/3 cups all-purpose flour
- 2 apples
- 1 large egg
- juice of one orange (about 3.4 fl oz (≈ 1/3 cup + 1 tbsp))
- grated orange zest
- 2 1/2 tsp baking powder
- a pinch of salt
- 7 tbsp melted butter (≈ 3.5 oz)
- one teaspoon ground cinnamon
- 1/2 cup sugar
- to taste grated coconut (desiccated)
- to taste powdered sugar
Steps
Peel the apples and cut them into small cubes. Drizzle them with the juice of one orange, add one teaspoon of ground cinnamon and mix. Meanwhile, prepare the cookie dough.
Beat the egg with the sugar in a bowl, add the melted butter, the grated zest of one orange and a pinch of salt.
Fold in the flour sifted together with the baking powder and the apples with the orange juice. Mix well to obtain a soft dough.
Scoop the dough by tablespoons and roll each portion in a bowl with the desiccated coconut, placing the cookies, one by one, on a tray lined with parchment paper.
Place the tray in the refrigerator and let the dough firm up for 15 minutes. Transfer the cookies on the parchment paper to a baking sheet and bake at 356°F for about 15-20 minutes.
Once baked and well cooled, dust them as desired with a little powdered sugar. The soft apple and coconut cookies are ready to be served.
