Pork Loin with Milk in Slow Cooker

The pork loin with milk in a slow cooker is one of the best Italian recipes with instant pot there is. Ingredients for Pork Loin with Milk

  • 2.4 lbs pork loin (whole)
  • 1 large yellow onion
  • 3 carrots
  • 1 potato
  • 1.5 cups whole milk
  • 2 tbsps butter
  • 2 tbsps extra virgin olive oil
  • 5 leaves sage
  • 1 sprig rosemary
  • 2 pinches nutmeg
  • 3 pinches fine salt
  • 2 pinches pepper

What You Need

  • 1 Slow cooker
  • Kitchen twine
  • 1 Immersion blender

Procedure

  • Wash the aromatic herbs and place them on the pork loin, then tie them together with the meat. Massage the meat with the salt and pepper. Distribute the butter and oil in the programmable pot, if you only have a slow cooker, this step should be done in a pan. Heat to 392°F and brown the meat on all sides.

    Meanwhile, peel the onion, potato, and carrots, wash them, and cut them into even pieces.

  • Add the vegetables to the meat and let them absorb the flavors, season with nutmeg, and finally add the milk. Turn the meat in the milk and then close the pot. Set the cooking time to 5 hours with the slow function or simmer function at 194°F.

  • Open the pot and remove the meat, placing it on a cutting board. If you prefer, for aesthetic reasons, also remove a few carrot slices and set aside. Use an immersion blender to blend the cooking base.

    Remove the twine and slice the meat into even slices. Immerse the pork loin slices in the milk and let simmer for 4–5 minutes.

    Serve the pork loin with its cooking base, carrot slices, and small fresh sage leaves or rosemary needles.

Additional Tips and Variations

The presence of the potato in the cream will give a lot of creaminess to the cooking base.

Pork loin with milk in a slow cooker pairs well with roast potatoes in an instant pot, mashed potatoes in an instant pot, or for a lighter side dish, try it with sweet and sour onions with instant pot.

Arista with Milk in Slow Cooker

With the same recipe, you can use a piece of arista, which differs from pork loin due to the bones on the side. The arista is also called pork rack. For the same weight indicated in the recipe, cook for 7 hours.

Pork Loin with Milk in Electric Pressure Cooker

Although I prefer low-temperature cooking for this cut of meat, pork loin with milk can also be pressure cooked in 20 minutes.

How to Preserve Pork Loin with Milk Under Vacuum

If you have leftover pork loin with milk or want to prepare it in advance, you can keep it for 10 days under vacuum. In this case, you will need a vacuum sealer, a bag, and a glass jar for the milk cream which you can freeze.
