The soft almond cookies made with only 3 ingredients are incredibly soft biscuits and very easy to make. A no-yeast dough made from almond flour and whole eggs, not just egg whites as in the case of marzipan. Besides the pleasant, tender texture, the aroma of these cookies is wonderful. They are delicious as they are, but if you wish you can flavor them with a few drops of vanilla or bitter almond extract (optional). Perfect to enjoy in company with a good cup of tea. Ingredients

  • 2 eggs
  • 2 1/8 cups almond flour
  • 1/2 cup granulated sugar (+ powdered sugar as needed to coat the cookies)

Steps

  • Mix the almond flour with the sugar in a bowl. Add the eggs and, if you like, a few drops of bitter almond extract or vanilla (optional).

  • Work the ingredients until you obtain a homogeneous mixture that is slightly sticky but easily moldable.

  • If the dough is still too loose, add a little more almond flour, a bit at a time.

  • Take small portions of dough and, with your hands, form balls of equal size (you will get about 20).

  • Gently roll them, one at a time, in a bowl of powdered sugar and place them on a tray lined with parchment paper. Refrigerate for at least 15–20 minutes.

  • Transfer the cookies on their parchment to a baking sheet and bake in a static oven preheated to 356°F for 10 minutes.
