- 1 lemon (organic zest and juice)
- 3 tbsp breadcrumbs

I start the recipe for the linguine by toasting the breadcrumbs in a pan with a splash of extra virgin olive oil for a few minutes, then setting the mixture aside.
I put the pot for cooking the pasta with plenty of water on the flame and, when it boils, I add the pasta, cooking it al dente.
In a new pan, I gently melt the salted butter, also adding the juice and zest of the organic or untreated lemon, and season with salt and pepper.
I wash the mint leaves, pat them dry, and after chopping them, I add them to the butter-lemon mix in the pan.
I add the moist pasta and while mixing, I pour in the previously toasted breadcrumbs.
I have saved a small ladle of cooking water to add only if needed…
I compose the plates for my guests and bring them to the table immediately!
