Soft, indulgent and easy to make, these cocoa cookies are prepared in a few simple steps by mixing all the ingredients in a bowl. They are butter-free and are shaped simply by hand, without cookie cutters or a rolling pin. Not to mention the aroma they release as soon as they come out of the oven! The exterior is coated with granulated sugar, making these tender and delicate cookies pleasantly a little crisp on the outside. Ingredients
- 2 cups all-purpose flour
- 6 tbsp unsweetened cocoa powder
- 1 medium egg
- 3 1/2 tbsp vegetable oil
- 1/4 cup milk
- 5/8 cup granulated sugar (+ as needed for garnish)
- vanilla extract
- 2 tsp baking powder
- a pinch of salt
Steps
Beat the egg with the sugar and the oil in a bowl. Add the milk, a pinch of salt and the vanilla extract.
Sift the flour together with the baking powder and the cocoa powder, then add them to the mixture, stirring until you obtain a dough that is fairly soft but not sticky.
Take small portions of dough, about 35 g (roughly 1.25 oz) each. Shape them into balls and work them with your hands until you elongate them slightly.
Once the cookies are shaped, roll each one in a bowl of granulated sugar, pressing slightly on the surface to flatten them a bit.
Arrange them on a tray lined with parchment paper as you go and let them firm up in the fridge for 15 minutes.
Transfer them to a baking sheet using the parchment paper and bake in a preheated conventional oven at 356°F for about 20 minutes.
Remove from the oven and let cool completely. The soft cocoa cookies are ready to be served on a serving platter.
