SOFT BLUEBERRY COOKIES

in ,

Blueberry cookies are a perfect blend of freshness and sweetness. Their soft, delicate texture combined with the fruity flavor of the blueberries makes them ideal for a breakfast or a wholesome snack, or to accompany a cup of tea or an herbal infusion during relaxing afternoons. The preparation is simple and quick. After obtaining a homogeneous dough, add the blueberries, taking care not to crush them too much to keep their color and flavor, then form balls of equal size. For a richer result, you can add pieces of white chocolate to the dough, which will gently melt during baking, creating a contrast between the chocolate’s sweetness and the blueberries’ tartness. These cookies keep their softness and fragrance for several days if stored in an airtight container. They can be customized further with a dusting of powdered sugar before serving, or served with a scoop of vanilla ice cream. Below, let’s see what you need to prepare our delicious soft blueberry cookies at home:

  • Add the eggs one at a time and the salt, continuing to mix. Then fold in the grated orange and lemon zest and the vanilla extract, mixing well.

  • Sift the flour and baking powder and gradually incorporate them into the butter, sugar, and egg mixture. Once you have a uniform, compact dough, gently fold in the blueberries, taking care not to break them.

  • Take a little dough with lightly floured hands, form balls of about 1.6 oz (about 3 tbsp) each, and place them spaced apart on a baking sheet lined with parchment paper.

  • Bake in a preheated conventional oven at 356°F for about 15-18 minutes, or until the edges of the cookies are lightly golden. Check the baking and adjust the time if necessary, bearing in mind that the cookies will remain soft in the center.

  • Remove from the oven and let cool on a wire rack. If desired, dust with a little powdered sugar before serving. The soft blueberry cookies are ready to enjoy!
