The percentage of this particular flour in the muffin batter is really minimal but, nevertheless, it gives color and flavor to our little sweets. It is a truly useful and versatile ingredient in the kitchen, suitable for both sweet and savory preparations such as cakes, cookies, bread, pasta, pizzas and focaccias. In addition, hemp flour is particularly rich in important nutrients for our body; it is sufficient to add it in small quantities, from 5% to 15% of the total and it should always be mixed with other flours. Ingredients
- 4 large egg whites egg white (about 4 egg whites (approx 165 g))
- 1 cup all-purpose flour
- 2 1/2 tbsp hemp flour
- 1/2 cup potato starch
- 3 1/3 tbsp vegetable oil
- vanilla extract
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- as needed dark chocolate chips
Preparation
Sift the flour, potato starch and hemp flour together with the baking powder into a bowl, mix everything and set aside.
In a bowl, beat the egg whites until stiff peaks form and gradually incorporate the oil and the vanilla extract.
Add the sifted flours with the baking powder and the sugar a spoonful at a time, continuing to mix until all ingredients are well incorporated.
Pour the batter into paper liners or a muffin tin, filling them 3/4 full, and finish by sprinkling the surface with dark chocolate chips.
Transfer to a preheated oven at 356°F and bake the little cakes for 18-20 minutes, performing the toothpick test which should come out completely dry.
Before serving the egg white hemp muffins, let them cool thoroughly, then transfer them to a serving platter.
