Ingredients

  • 1 2/3 cups all-purpose flour
  • 1/3 cup potato starch
  • 2/3 cup Greek yogurt
  • 7 tbsp neutral oil (seed oil)
  • 4 eggs
  • 2/3 cup sugar
  • a pinch of salt
  • 1 packet baking powder
  • vanilla extract
  • to taste ground cinnamon
  • 1/2 cup dark and caramel chocolate chips
  • to taste powdered sugar

Steps

  • Start by whisking the eggs with the sugar until they become pale, voluminous and frothy. Work the mixture for several minutes to incorporate air and ensure a light structure for the cake.

  • Add a pinch of salt, the vanilla and a light dusting of cinnamon, then pour the oil in a thin stream while continuing to mix. Also fold in the Greek yogurt, a little at a time.

  • Sift together the flour, potato starch and baking powder. Add the dry ingredients to the mixture in several additions, folding from the bottom up with a spatula so as not to deflate the batter.

  • Lightly toss the dark and caramel chocolate chips in flour and fold them into the batter, distributing them evenly.

  • Butter and flour a 9.5-inch bundt pan (24 cm), pour in the batter and gently level the surface. Bake in a preheated conventional oven at 356°F (180°C) for about 35 minutes, checking doneness with a toothpick which should come out dry.

  • Remove the cake from the oven and let it cool in the pan for a few minutes before unmolding, then transfer it to a wire rack until completely cool.

  • Optionally finish with a dusting of powdered sugar or a gentle drizzle of caramel.
