Ingredients

  • 5/8 cup granulated sugar
  • 5 tbsp water
  • 5 large egg yolks
  • 1 cup mascarpone (about 8.8 oz)
  • 1 cup whipping cream
  • 3.5 oz Pavesini (Italian ladyfinger biscuits)
  • unsweetened cocoa powder
  • coffee (Sweetened)

  • Make the cream
    Bring the water and sugar to 250°F (121°C) to obtain a hot syrup.
    Meanwhile, whip the egg yolks with a mixer and pour the syrup in a thin stream, continuing to whisk until you get a pale, frothy cream.
    Add the mascarpone and whisk again.

  • Also fold in the whipping cream and whisk until you obtain a soft, stable cream.
    Assemble the glasses
    Quickly dip the Pavesini in the sweetened coffee

  • and arrange them on the bottom of the glass.
    Add a layer of cream,
    sprinkle with unsweetened cocoa powder,

  • Add another layer of coffee-dipped Pavesini, more cream and cocoa.
    Cut sponge cake or yogurt plumcake into small cubes.
    Distribute them over the surface to create the classic mimosa effect.
