Ingredients
- 5/8 cup granulated sugar
- 5 tbsp water
- 5 large egg yolks
- 1 cup mascarpone (about 8.8 oz)
- 1 cup whipping cream
- 3.5 oz Pavesini (Italian ladyfinger biscuits)
- unsweetened cocoa powder
- coffee (Sweetened)

Make the cream
Bring the water and sugar to 250°F (121°C) to obtain a hot syrup.
Meanwhile, whip the egg yolks with a mixer and pour the syrup in a thin stream, continuing to whisk until you get a pale, frothy cream.
Add the mascarpone and whisk again.
Also fold in the whipping cream and whisk until you obtain a soft, stable cream.
Assemble the glasses
Quickly dip the Pavesini in the sweetened coffee
and arrange them on the bottom of the glass.
Add a layer of cream,
sprinkle with unsweetened cocoa powder,
Add another layer of coffee-dipped Pavesini, more cream and cocoa.
Cut sponge cake or yogurt plumcake into small cubes.
Distribute them over the surface to create the classic mimosa effect.
