🌾 Why are Mucenici made on March 9?
Mucenici are a traditional Romanian pastry prepared every year on March 9, the day dedicated to the 40 Martyrs of Sebaste.
In Romania this date also symbolically marks the beginning of spring.
The figure-eight shape 8 represents infinity, sacrifice and spiritual rebirth.
There are two versions:
the boiled mucenici (typical of Muntenia)
the baked mucenici (typical of Moldavia)
Today we make the baked version, soft like a brioche, soaked in syrup, brushed with honey and covered with chopped walnuts.

Ingredients

  • 4 cups type 0 flour (approx. all-purpose flour)
  • 2 eggs
  • 1/3 cup granulated sugar (about 3 oz)
  • 1 cup milk (about 7.5 fl oz)
  • 1 packet (2 1/4 tsp) active dry yeast (7 g)
  • 1 tsp orange zest (orange paste)
  • 3.5 tbsp butter (about 1.8 oz)
  • 1 2/3 cups water (about 13.5 fl oz)
  • 3/4 cup granulated sugar (for the syrup)
  • 7 tbsp honey (about 5.3 oz)
  • 1.25 cups walnuts (chopped, about 5.3 oz)

  • Let’s start with the dough
    In a bowl put the flour, the sugar, the crumbled yeast, the softened butter, the eggs,

  • add the orange zest and begin kneading, adding the milk little by little.
    Knead for about 10 minutes until you obtain an elastic dough.

  • Transfer to the work surface, form a ball and place it in a tall container.
    Cover and let rise for about 1 hour, until doubled in size.

  • Form the mucenici
    After the rise divide the dough into smaller pieces.

  • Shape into ropes.
    You can fold them in half or cut them to make handling easier.
    Braid each rope, join the ends to form a circle and then fold to obtain the classic figure-eight shape.

  • Arrange all the figure-eights on a baking tray lined with parchment paper, leaving space between them.
    Cover and let rise for another hour.

  • Baking
    Brush with beaten egg.
    Bake at 356°F for about 30 minutes, until golden.
    Let cool completely.

  • Prepare the syrup
    Bring the water and sugar to a boil.
    Let cool and add a touch of rum flavoring (optional).
    Finishing
    Take the cold mucenici and soak them one at a time in the syrup.

  • Brush them with honey and roll them in the chopped walnuts.
