Raw Purple Cabbage Pesto: Quick, Healthy and Colorful Recipe
It’s no secret that I love experimenting with quick pestos and sauces to dress first courses (and more!), but this purple/red cabbage pesto was a real revelation! It’s a visual delight with its intense reddish hue, and a boon for the body thanks to its extraordinary nutritional properties.
Why choose Purple (Red) Cabbage?
Purple cabbage is not only beautiful: it’s a concentrated source of benefits! Compared to common green cabbage, the purple variety contains 10 times more pro-vitamin A, twice the iron, and powerful antioxidants thanks to the natural pigments that fight free radicals and prevent tissue aging, plus metabolic benefits.
How to make Purple Cabbage Pesto
To keep all the benefits intact, I chose to make this pesto completely raw. If you prefer a milder flavor, you can blanch the cabbage for a few minutes, but the raw version releases the most energy!
The secret ingredient? Fresh thyme, which pairs fantastically with the earthy note of the cabbage.
