Air Fryer Muffins an easy recipe to make, similar to my chocolate and blueberry muffins but without chocolate and cooked in an air fryer!

Lately, due to time and work constraints, I’ve experimented a lot with this new appliance, and since I love muffins so much, I’ve prepared several versions like the Banana and Walnut Muffins and the Black Muffins, I decided to bake them in the air fryer to speed up the cooking and avoid using the oven. Often because I might have other dishes cooking in the oven, and the air fryer always comes to my aid!

If you love muffins, you absolutely cannot miss this recipe! Really easy to make, and I’m sure they’ll be a hit in your home too!

Ingredients

  • 2/3 cup all-purpose flour
  • 1/3 cup blueberries
  • 1/4 cup sugar
  • 2 tbsp milk
  • 2 tbsp peanut oil
  • 2 tbsp potato starch
  • Half packet baking powder
  • 1 egg
  • lemon zest
  • powdered sugar

  • 1 Air Fryer

Preparation

  • In a bowl, crack the whole egg.

    Add the oil and milk at room temperature to the egg.

  • Add the sugar, the zest of one lemon, preferably organic, and mix with a whisk to combine the ingredients.

  • At this point, sift directly into the mixture the all-purpose flour, potato starch, and baking powder.

  • Mix the batter with the whisk to obtain a smooth and lump-free cream.

    Finally, add the washed and dried blueberries to the air fryer muffin batter.

  • Give the batter a final stir to evenly distribute the blueberries throughout the mixture.

    Distribute the muffin batter into the muffin cases.

    Transfer the muffin cases into the air fryer.

    Bake the muffins in the air fryer at 320°F (160°C) for 20 minutes.

    Once cooked, remove the muffins, let them cool, and sprinkle with powdered sugar before serving.

STORAGE

Store the air fryer muffins under a glass dome for up to 4 days.

  • What type of muffin cases to use in the air fryer?

    You can use classic silicone muffin cases, ceramic muffin cases, paper muffin cases, or aluminum muffin cases.

  • Can I make air fryer muffins without milk?

    To make air fryer muffins without milk, you can replace the 30 g of milk with a plant-based milk or water.
