Ingredients

  • 3 eggs
  • 6 slices bacon
  • 10.6 oz peeled potatoes
  • 3 tbsp grated Parmesan cheese
  • to taste salt
  • to taste paprika
  • to taste extra virgin olive oil
  • to taste chives

Steps

  • Peel the potatoes and put them to boil in a pot of water. When cooked, mash them with a potato masher.

  • Add the grated Parmesan, paprika, a little chopped chives and a pinch of salt to the potatoes.

  • Mix well and then divide the mixture into three portions.
    Form a potato cake with a small indentation in the center.

  • Line the air fryer basket with parchment paper suitable for cooking, brush it with a little oil and place the potato cakes on top.
    On each cake lay two slices of bacon and cook at 356°F for 10 minutes.

  • Open the basket and gently crack an egg onto each potato cake, seasoning with a pinch of salt.
    Close and cook for another 5-6 minutes at 356°F.
    If you don’t like a runny yolk, extend the cooking time by a couple of minutes.
