Apple and Almond Cookies in Air Fryer

Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 eggs
  • 1/3 cup erythritol
  • 1 apple
  • 1/2 cup chopped almonds
  • 2 tsp baking powder
  • lemon extract
  • to taste ground cinnamon

Steps

  • Before starting the dough, peel the apple and cut it into very small pieces, adding a few drops of lemon.

  • In a bowl pour the erythritol and the eggs and whisk by hand.
    Add the flour mixed with the baking powder little by little.

  • Fold in the apple pieces and the chopped almonds.

  • Sprinkle a little cinnamon and add a bit of lemon extract, then mix everything.

  • Place parchment paper in the air fryer basket and form the cookies using two spoons.

    Set the cooking temperature to 284°F for about 20–25 minutes.

    Once cooked, let cool and then sprinkle with powdered sugar.

The apple and almond cookies in the air fryer keep their fragrance and softness for a few days if covered with plastic wrap.
