Ingredients – Valentine’s Cookies
- 4 cups 00 flour (Tipo 00)
- 1 cup granulated sugar
- 7 oz butter
- 3 eggs
- 1 orange zest (grated)
- 1 lemon zest
- as needed red food coloring
Tools
- Pastry board
- Rolling pin
Steps – Valentine’s Cookies
In a food processor, put the flour and the butter just taken out of the fridge.
Pulse until you obtain a sandy mixture.
Add the sugar.
Pour everything onto a work surface and form the classic fountain.
In the center, break the eggs and add the grated orange and lemon zest.
Work the eggs first and then knead everything, forming a homogeneous and compact dough.
At this point, divide the dough in two and color one part with red gel food coloring.
Wrap the shortcrust pastry in plastic wrap and place it in the fridge for about 30 minutes.
After resting time your dough is ready!
Roll out the red dough on parchment paper, not too thinly, and using a small heart cutter, cut out many hearts from the dough. (Keep the rest of the red dough that you will need later).
Arrange the hearts one on top of the other, brushing the surface of each with a little water so they stick together.
When your stack of hearts has reached the right height (it will take about 12 hearts), place it on parchment paper and freeze it for about 20 minutes.
I suggest you place it on a rack (I used the oven rack) so the pointed ends of the hearts face down.
Meanwhile, roll out the plain (white) dough fairly thin and, when the hearts are frozen, brush them with water and wrap the plain dough around them, shaping it well.
Freeze once again for about 20 minutes.
Roll out the red dough and repeat the same procedure, brushing the pastry and wrapping the red part around it.
Roll to obtain a perfect cylinder, wrap in parchment paper and freeze for about 40 minutes.
At this point, cut the cylinder into slices, removing the initial end piece.
Arrange on a baking sheet lined with parchment paper.Bake at 392°F for about 12 minutes.
The cookies should not bake too much; if they seem soft, don’t worry, they will harden once they are cool.
Your Valentine’s Cookies are ready!
You can store the cookies for a few days in an airtight container once they are completely cool.
