Nutella Struffoli are a reinterpretation of the classic Neapolitan struffoli recipe. This base recipe, in particular, is designed to obtain struffoli that DO NOT FOAM and are beginner-proof!
I wanted to make them sweeter and try the much-criticized Nutella version, but I also prepared them in the traditional version and you can find that recipe below.

Ingredients for Nutella Struffoli
- 4 cups all-purpose flour
- 4 eggs
- 2 1/2 tbsp granulated sugar
- 3 1/2 tbsp unsalted butter
- 1 pinch salt
- 1 tsp baking powder
- 2 tbsp liquor (Strega or anise)
- 1 orange zest
- 1 lemon zest
- 1 packet vanillin (vanilla powder)
- 1 1/3 cups Nutella®
- to taste colored sprinkles
Steps for Nutella Struffoli
On a work surface, pile the flour into a well.
In the center, add the eggs with the sugar and start working them.
Then add the melted butter, the salt, the grated citrus zests and the vanillin.
Also add the teaspoon of baking powder and the Strega (or anise) liqueur.
Begin kneading and when the center becomes firmer, take the remaining flour from the edges.
Continue kneading until all the flour is incorporated and you have obtained a firm, smooth dough.
Cover the dough with plastic wrap and let it rest for about 15 minutes.
Cut into rolls, shaping them with your hands, and cut many small pieces.
Lightly roll the pieces on the surface to round them, avoiding adding extra flour.
Remove all excess flour with a sieve (this step will help prevent foam from forming during frying).
Fry in hot vegetable oil until golden. Let them drain on paper towels.Warm the Nutella in a double boiler or in the microwave until liquefied, pour it into a bowl or into the pan off the heat, and coat the struffoli with it.
Arrange on a tray and decorate with colored sprinkles.
Struffoli can be stored for a few days covered with plastic wrap.
