Ingredients

  • 1 1/2 cups corn couscous
  • 1 cup water
  • 7 oz feta
  • 5 cups arugula (about 100 g)
  • 1 cup cherry tomatoes
  • 15 pitted olives
  • 1/4 Tropea red onion
  • 4 tbsp extra virgin olive oil
  • to taste salt

Steps

Preparing Greek-style Couscous is very easy and quick.

  • First, place the precooked couscous in a bowl with one tablespoon of oil, and after bringing the water to a boil, pour it over the couscous.

  • Cover the bowl and let it absorb all the liquid for about 4–5 minutes.

  • Meanwhile, rinse and cut the cherry tomatoes and the feta into cubes.

  • Chop the olives, the onion, and the previously washed arugula.

  • Season everything with salt and oil.

  • After the couscous has rested, fluff it with a fork to separate the grains and combine it with the other ingredients.

  • Mix and place in the refrigerator to rest for about half an hour to let the flavors meld.
