Ingredients
- 1 sheet puff pastry
- 1 apple
- 6 slices speck
- 1 egg (+ 1 tablespoon of milk, for brushing)
- mixed seeds (sesame, poppy or others)
Tools
- Baking tray
- Bowl
- Brush
- Pastry wheel or knife
Preparation
Wash and peel the apple, remove the core and cut into thin slices.
Cut the speck slices in half.
Unroll the puff pastry on the work surface and divide it into 12 wedges.
Place a piece of speck and a couple of apple slices on each wedge.
Roll up the pastry wedges starting from the widest side to the tip. Slightly fold the ends to form small croissants.
Place them on a baking tray lined with parchment paper, keeping them slightly apart.
Brush them with a egg, beaten with a splash of milk. Then sprinkle with seeds of sesame, poppy or other mixed seeds.
Put the tray in a convection oven at 375°F and bake the croissants for 18-20 minutes, or until the pastry is puffed and golden. Adjust the cooking settings based on your oven’s characteristics.
The puff pastry croissants with apples and speck are ready to be served… enjoy your meal!
Tips and Notes
The leftover savory croissants can be stored for up to one day in the fridge.
Once baked, I recommend serving them immediately so the pastry is more fragrant. However, you can prepare them a few hours in advance, keep them in the fridge, and then brush and bake them as needed.
FAQ
What can I use instead of speck?
You can replace speck with smoked or regular cooked ham.
Which apples can I use?
Any variety will do, as long as they are firm and not mealy.
Can I also prepare the croissants in a sweet version?
Of course, you can fill them with a layer of jam and apple slices, then sprinkle them with brown or granulated sugar.
