    In a bowl, whisk the eggs with the sugar and a pinch of salt. They don’t need to become as voluminous as for a sponge cake, just make sure the mixture is pale and homogeneous.
    3. Combine the two worlds
    Pour the melted chocolate in a thin stream into the egg mixture, folding gently from the bottom up. Finally, sift in the flour and the cocoa and fold everything together with a spatula.
    4. Prepare the ramekins
    Carefully butter the ramekins (aluminum or ceramic) and dust them with unsweetened cocoa (avoid flour to prevent white spots on the finished cake). Fill the batter up to about 3/4 of their height.

  • This is the crucial part for your perfect molten lava cake:

    Set the air fryer to 338°F. Place the ramekins in the basket.
    Cook for 9 minutes.

    Note: Every air fryer is different. I recommend testing with a single cake the first time. If the top is set but “wobbles” slightly when shaken, it’s ready!

⚡ The Secret of Dual Heating Elements

If you own a modern air fryer like mine (Cosori Dual Blaze 10 Liter) with dual heating elements (top and bottom), you have a huge advantage! In this case, the heat is more even and less aggressive on the surface.

My foolproof test: Set the temperature to 338°F for 9 minutes.

This combination allows the shell to form without drying out, keeping the interior incredibly liquid. If instead you use a classic single-element air fryer, keep it at 356°F but start checking the cooking after 8 minutes!

  • Can I prepare the batter in advance?

    Absolutely yes! You can prepare the batter, put it into the ramekins and store them in the refrigerator until you’re ready to bake. In that case, add 1 minute to the cooking time because the batter will be cold.

  • Can the raw cakes be frozen?

    Freeze the filled ramekins and, when you want one, cook them straight from the freezer in the air fryer. Bake at 338°F for about 12-13 minutes.

  • Can I use milk chocolate?

    Yes, but keep in mind milk chocolate contains more sugar and fat. The center will be even sweeter (reduce the sugar!), and the shell may be slightly less structured. Dark chocolate (60-70%) remains the best choice for a perfect contrast.
