This week’s usual Monday column is moving by a day, so today I have an extra recipe! In my crowded archive of recipes I still need to write (will I ever get them all written? I hope so, sooner or later I’ll manage!) I found these shortcrust cookie bites with almonds and chocolate, a simple recipe from a few years ago — cookies that are quick to make and just as quickly disappear into the mouths of children, and not only children. 😉 I made them for my kids’ afternoon snack, back when they still had a proper snack time. Ahhh how time has passed… this recipe is becoming vintage! 😄
Well yes, in fact it’s almost a granny recipe, one of those irresistible recipes in their simplicity: crunchy cookies made with classic shortcrust pastry, just a few ingredients: only flour, butter, an egg, a bit of chocolate and almonds — enjoy your snack. 😍

Ingredients
- 1 block shortcrust pastry (dough)
- dark chocolate
- sliced almonds
Tools
- Cutting board
- Rolling pin
- Knife
- Cookie cutters
- Parchment paper
Steps
Prepare the classic shortcrust pastry following the basic recipe.
Roll out the shortcrust pastry with a rolling pin.
Use cookie cutters in your preferred shapes and cut out the cookies.
Line the baking sheet with a sheet of parchment paper and place the cookies to be baked on top.
Chop the chocolate with a knife.
👉 As an alternative to sliced almonds, you can cut whole almonds in half lengthwise and use half an almond for each cookie.
Distribute, to taste, the almond flakes and chopped chocolate over the cookies. Gently press with your fingers to make the almonds adhere to the dough.
Bake the shortcrust cookie bites in the oven at 356°F for 10 minutes.
