Ingredients

- 7/8 cup milk
- 1 3/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 2 1/2 tsps baking powder
- 1 1/4 cups sugar
- 1/4 cup vegetable oil
- 3 1/2 oz dark chocolate
- 7/8 cup heavy cream
- 1 tsp honey
- 2 tbsps butter
- as needed apricot jam (for filling)

How to make Sacher Muffins
Pour the cream and butter into a pan, place it on the heat and cook until it almost boils, then add the chocolate and mix with a whisk,
Then let the ganache cool at room temperature.
With a whisk in a large bowl, beat the egg with the sugar.
Pour in the milk and oil, gradually incorporate the flour, cocoa, and baking powder. Then fill the muffin molds and bake in a preheated oven at 356°F for about 13 minutes.
Once cooled, use a fruit corer to make a hole in the upper center of each muffin.
Fill the hole with apricot jam.
As a final step, decorate the muffins with the chocolate ganache prepared earlier.
With the quantities and doses of each ingredient, you will make about 12 Sacher muffins.
Storing Sacher Muffins
This particular treat is not much different from classic muffins; in fact, they can be stored under a cake dome for up to 3 days before they become too dry.
