Ingredients for Super-Easy Cocoa Cookies: No Cutters, Ready in a Flash

  • 1 1/4 cup all-purpose flour
  • 4 tbsp unsweetened cocoa powder
  • 1/3 cup neutral oil (or extra virgin olive oil)
  • 1 egg
  • 1/4 cup granulated sugar
  • 2 tsp baking powder

Steps for the Super-Easy Cocoa Cookies

  • In a bowl, beat the egg with a pinch of salt and the oil. Add the flour, the sugar, the baking powder and the cocoa, mixing well until you obtain large crumbs without forming a dough ball. If the mixture is too dry, add one or two tablespoons of water to help form these coarse crumbs.

    Fold in the chocolate chips or dark chocolate shavings and pour the whole mixture onto a baking sheet lined with parchment paper (or into a round pan). Press firmly with your hands to form a single large cookie: the surface will remain rustic and uneven thanks to the crumbs.

    Bake at 356°F for 20 minutes.

  • Once baked, remove from the oven and let cool completely before cutting the treat into squares or bite-sized pieces, as you prefer.

Storage for Quick and Indulgent Cocoa Cookies

You can store your super-easy cocoa cookies in an airtight container or a classic tin box for about 4–5 days. It’s important that they are completely cool before storing so they keep their ideal texture. If you prefer, you can also freeze them once cut into pieces: they will keep well for about a month.
