Ingredients

  • 3 eggs
  • 1 2/3 cups low glycemic index flour (I used Fiber but you can use the one you prefer)
  • 4 tsp stevia
  • 3 tbsp erythritol
  • 2.6 oz unsweetened dark chocolate
  • 9 oz cream cheese (Exquisa Fitline or the one you prefer)
  • 2 tbsp lemon juice
  • 1 1/3 tbsp water
  • vanilla extract
  • 1 1/2 tbsp peanut butter
  • 1 packet baking powder
  • Half teaspoon ground cinnamon
  • 2 apples (about 7 oz (200 g) peeled)

Steps

  • Prepare the apples: peel them, cut into cubes and place them in a bowl with lemon juice and cinnamon. Mix and let rest.
    Coarsely chop the dark chocolate and set aside.
    In a bowl, whip the eggs with stevia and erythritol.
    Add the grated lemon zest, then Exquisa Fitline, peanut butter, water. Mix with the beaters.
    Fold in flour and baking powder and stir until you get a homogeneous batter.
    Pour the batter into the oiled and floured pan.
    Add the apples with their juice, half of the chopped chocolate and gently fold with a spoon.
    Sprinkle the surface with the remaining dark chocolate.
    Bake in a preheated conventional oven at 392°F for 45 minutes.

The cake keeps at room temperature for 3 days, under a cake dome or wrapped in cling film.
