You can call it ice cream — it’s refreshing and delicious for the summer, very quick to make, super tasty and indulgent. These mini popsicles really please everyone. They can also be called ketogenic popsicles because they fully match the K-ratio formula. I made these popsicles on a stick as a keto snack, but they were so appreciated that even people unfamiliar with the ketogenic diet loved them. I tested them as I went, and then included them in the keto diet menu — firstly because the complete recipe’s K-ratio calculation gave me a result of 1, therefore perfect to be considered a keto recipe, and secondly because they are tasty, simple, fast, low-carb (only 2.6 g of carbohydrates per popsicle). The K-ratio rule is one of the topics of the “ketogenic nutrition” course I’m completing with Dr. Roberto Uliano.
But now let’s prepare: the fastest popsicle ever, with only apple and keto chocolate.

Ingredients for 8 popsicles
- 1 apple apple (about 3.5 oz (100 g), cut into 8 slices)
- 1.7 oz sugar-free dark chocolate
- 1 tsp coconut oil
- 1 tbsp pumpkin seeds

Preparation for 8 popsicles
To make 8 popsicles, first melt — either in a bain-marie or in the microwave — about 1.7 oz (48–50 g) of sugar-free dark chocolate. When it’s well melted, add 1 teaspoon of coconut oil and stir with a spoon until the two ingredients are combined.
Meanwhile, wash one apple, peel it, cut it into 8 slices and remove the seeds from each slice.
Place a wooden stick into each apple slice.
Take one apple slice at a time and place it over the shallow plate containing the melted chocolate, then dip it — or better, use a teaspoon to let some chocolate drip onto each slice — finally shake off the excess and sprinkle with crushed pumpkin seeds (ready in a second with the help of a small chopper with blades); if you prefer, you can use whole seeds.
Transfer the chocolate-covered apple sticks to a tray lined with parchment paper, then place the tray in the freezer.
After a few minutes they’re already delicious to eat.
