Ingredients
- 3.5 oz sugar-free dark chocolate (or whichever chocolate you prefer)
- 7 oz (about 3/4 cup) heavy whipping cream
- to taste sweetener (I used about 1 tablespoon powdered erythritol (≈15 g), but use whatever you prefer)

Steps
First, melt the chocolate in a bain-marie or in the microwave. Then pour it into 6 small plastic or paper cups (espresso-style); with a teaspoon spread the chocolate well over the entire inner surface of each cup. Set them aside until the chocolate has solidified (to speed up the process you can put them in the freezer for 2 minutes). Meanwhile, beat the heavy cream with electric beaters and add sweetener (preferably powdered). Stop the beaters when the cream is semi-whipped. Fill the 6 cups with the cream. Insert a wooden stick in the center of each popsicle, then put them in the freezer for a few hours until they are completely firm.

Store the sugar-free chocolate popsicles directly in the freezer inside the plastic cups that protect them from frost. Place the cups in an airtight container to prevent them from absorbing odors or moisture.
Tips for removing the popsicles from the cups
To remove a popsicle from its cup it’s really easy — here’s how I do it: take a popsicle cup from the freezer, hold it in your hand to warm it for a few seconds, then try to pull it out by the stick without forcing it too much. When you feel it starting to release from the sides, gently extract it. It takes very little time — easier said than done! Even the youngest members of my household have learned this little trick by now.
