Ingredients
- 1 oz avocado
- 2 oz zucchini
- 2 tbsp unsweetened cocoa powder
- 1/4 cup ricotta
- 3 tbsp milk
- 1 teaspoon erythritol (or sugar if you prefer)
- 0.35 oz dark chocolate (sugar-free)
- 1 tsp grated coconut (desiccated)
Tools
- mini chopper with blades
Steps
Start by cutting the avocado and the raw zucchini into small pieces so they blend more easily. Put them in the chopper along with the unsweetened cocoa, erythritol, milk and half the ricotta. Blend everything for a few minutes until you obtain a smooth, velvety cream without lumps.
Pour the cream into a glass (about 3 1/8 in diameter and 2 3/8 in high) filling it to the rim. This amount is perfect for a single portion, designed to be balanced in macros.
Spread a layer of the remaining ricotta on top of the avocado cream, using a teaspoon to level it well. Melt the sugar-free dark chocolate (in a bain-marie or in the microwave for a few seconds), then pour it over the surface and spread it thin to form a delicious covering. Finally, finish with a light sprinkle of desiccated coconut.
Place in the refrigerator for 10–15 minutes, just long enough to slightly firm the topping. Then enjoy your creamy, fresh and surprisingly light cup!

Frequently Asked Questions (FAQ)
Can zucchini be eaten raw in the Sugar-Free Avocado and Chocolate Dessert? Why use it?
Yes, raw zucchini can be eaten without problems, especially if it is young and fresh. In this recipe it is blended together with the avocado to create a creamy, light base with a neutral flavor. You don’t taste it in the final result, but it helps lighten the texture and increase the volume of the dessert, making it even healthier and more balanced.
Can I substitute ricotta with yogurt?
Yes, you can substitute ricotta with Greek yogurt if you prefer a fresher, slightly tangier texture. The result will be a bit less compact but still delicious. I recommend a full-fat, thick yogurt with no added sugars to keep the dessert low-carb.
Is this sugar-free avocado and chocolate dessert suitable for people with diabetes?
Yes, the dessert is also suitable for those who need to control glycemic index. It contains no added sugars and is sweetened with erythritol, a natural zero-calorie sweetener with no glycemic impact. As always, if you have diabetes, consult your trusted nutritionist about the ingredients.
Is this sugar-free avocado and chocolate dessert gluten-free?
Yes, this recipe is naturally gluten-free. It does not contain flours or cereals, only fresh gluten-free ingredients like avocado, zucchini, cocoa, ricotta and sugar-free dark chocolate. It is therefore perfect also for people with celiac disease or those following a gluten-free diet.
