  • 1/2 cup sheep ricotta
  • 2.5 oz (cooked) beef (stew-type, weight when cooked)
  • 1.5 tbsp extra virgin olive oil
  • 1 tbsp pumpkin seeds

Weigh the ingredients with a scale

  • To prepare Wednesday’s keto dinner, first put the stew meat in a pot with one tablespoon of oil and a small cup of water. Cover with its lid and cook for 20 minutes over low heat. Turn occasionally.

    Then cook the asparagus steamed or directly in a saucepan with about 1/2 inch of water. Cover and cook 7 – 8 minutes or until soft.

  • Place the ricotta in slices on a plate, add the cooked, tender stew meat, finish with the asparagus.

    Sprinkle with pumpkin seeds and dress everything with the remaining oil.
