Definitely without granulated sugar. You may be wondering: meringues are made with egg white and sugar — how is it possible to make them without one of the two required ingredients? I’ll explain right away.

- 2.8 oz sweetener (erythritol/stevia mix) — about 0.4 cup (approx. 6.5 tbsp)

Choosing the sweetener
To make zero-calorie meringues, you don’t use regular sugar; it must be replaced with a sweetener. If you have one you usually use in your recipes, you can use that. I’ve tried many: from
coconut sugar, to birch sugar (xylitol) or even apple syrup, but also sukrin and pure stevia. Then I discovered erythritol, a natural zero-calorie, zero-carb sweetener (sweetens ~70% as much as sugar). I buy the 5 kg jar and it lasts a year — economical if you use it a lot. Lately I found a new product: the
Stevia + Erythritol, which sweetens just like sugar and doesn’t leave the licorice aftertaste of pure stevia. It costs more than pure erythritol, but you use less of it so the price balances out. For those new to ‘sugar-free’ products it may seem odd to use more expensive items than a regular bag of sugar, but it’s worth it. The body detoxes from sugar, changes, and you feel better overall. Health improves, immunity increases, cellular aging slows. Your complexion becomes more radiant.
Before starting the preparation of the zero-calorie meringues, you need to turn the sweetener into a powdered (icing) form — a food processor with blades does this in no time. I use a pulse grinder like the
Grinder on pulse — wonderful, durable, simple and economical. I’d recommend it to anyone who needs one.In a bowl, place 40 g (about 1.4 oz) of egg whites (better at room temperature). Beat with an electric mixer until they become slightly foamy and hold some body.
Add 80 g (about 2.8 oz ≈ 0.4 cup / ~6.5 tbsp) of powdered sweetener and continue whipping until the mixture becomes stiff and glossy.
Transfer the meringue into a piping bag and pipe about 18 meringues onto a baking sheet lined with parchment paper.
Bake the meringues in a preheated oven at 176°F for 1 hour. Then turn the oven off. At this point the meringues are cooked but not fully dry — you can test by gently touching one. To dry them and make them crispy: place a spatula between the oven door and the oven body to leave a small gap for air to circulate. Leave them like this until completely cool (a few hours, or overnight if you are not in a hurry).
The meringues are ready, tasty and crunchy. Excellent enjoyed plain as a zero-calorie treat, or filled with a light custard such as the egg-white-only custard and fresh strawberries.

Being on a diet doesn’t necessarily mean making extreme sacrifices. You need to eat well and healthy. Start with the grocery shopping: get into the habit of putting selected foods into your cart so they’re always in the pantry instead of super-caloric items. Once you become aware of this, half the diet is already in place.
Now let’s prepare today’s breakfast: as every morning, never miss a nice cup of green tea without sugar or with erythritol to taste + a squeeze of lemon (add only when the tea has reached about 122°F so it is hot enough to help dissolve toxins yet cool enough not to denature vitamin C) + a generous slice of this diet sponge cake (+ 10 almonds to snack on now or during the morning or half an hour before lunch to arrive at lunch without hunger spikes).
If you don’t have time to bake the cake, you can replace it with: 1 coconut Greek yogurt + 25 g (about 0.9 oz / ~1/4 cup) of muesli + 1 kiwi (about 80 g ≈ 3 oz) + 10 almonds and, of course, green tea.
During the day, drink at least 2 liters of water (about 8.5 cups / ~68 fl oz). Don’t drink whole glasses at once; sip small amounts regularly. Water purifies and hydrates the whole body.

How is it possible that 1 meringue has no calories or carbs?
Simple. For the whole recipe (18 meringues) you need 40 g (about 1.4 oz) of egg whites + 80 g (about 2.8 oz) of erythritol.
40 g of egg white has 17 calories, so 1 meringue doesn’t even reach 1 calorie. Erythritol has no calories. Regarding carbohydrates: the same applies — 40 g of egg white has about 0.4 g of carbs, so a single meringue contains only about 0.02 g of carbs, practically nothing. Carbohydrates from erythritol pass through our bodies without being assimilated, so they effectively count as zero ![]()
