- 1 Electric hand mixer
- 1 24 cm springform pan
- 1 mixing bowls
- 1 spatula
Preparation
Beat the softened butter with the powdered erythritol and vanilla until creamy.
Add one yolk at a time, mixing well with the beaters after each addition.

Questions and Answers
If you have questions about the Ultra-Soft Butter Cake, you can look through the Q&A below or ask your own question.
How can I make my Ultra-Soft Butter Cake suitable for a Keto diet?
You can replace the sultana raisins with dried nuts (walnuts, almonds, hazelnuts), oilseeds or high-percentage sugar-free dark chocolate. The rest of the ingredients are appropriate for a low-carbohydrate eating style, so you can prepare the cake following the recipe.

What is the secret to an Ultra-Soft Butter Cake?
Beating the butter well with erythritol and incorporating one yolk at a time, gently mixing after each addition, is essential to obtain a light and fluffy texture. In addition to this technique, the type of flour plays a major role; for example, lupin flour not only has a very low amount of carbohydrates but also gives the cake an extremely soft texture, almost as if ricotta were in the batter.

Can I replace erythritol with other sweeteners in the Ultra-Soft Butter Cake?
Yes, you could use other natural sweeteners. Keep in mind, however, that you will still need a “real quantity” of a very fine powdered sweetener to create the butter cream, so it is not possible to use a few drops of a liquid sweetener or only a few grams of another powdered sweetener.
