Ingredients
- 17.6 oz spaghetti
- 7 oz grouper fillet
- 1.5 tbsp extra virgin olive oil
- 1 tsp onion
- 1/3 cup milk
- to taste salt
- chili pepper (if desired)
Tools
- 1 Pasta pot Lagostina Pasta Pot Stainless Steel 18/10 + Glass Lid and Built-in Colander Basket
Passaggi
Cook the spaghetti in plenty of salted water
Divide the fish fillet into two portions
Cut one portion into pieces and pass the other through a parsley press together with the onion (or you can use a food chopper)
Place a pan over the heat, add the oil and the fish, both the pieces and the chopped portion. Cook over medium heat for about 3 minutes. Stir
Add the milk and raise the heat, let it thicken for a few moments then add the cooked and drained spaghetti
Stir quickly over the heat and before the sauce dries out too much (it should remain creamy) turn off the stove
If you like spicy flavors you can sprinkle the pasta with chili powder before serving.
Tips
Use thick spaghetti (size 5) for the perfect texture: they hold the creamy sauce well.
If the grouper fillet is thick, cut it into small pieces for even cooking.
For a creamier result, you can slightly increase the amount of milk (up to 100 g, about 1/2 cup).
For an aromatic touch, add grated lemon zest at the end of cooking.
Variations
Light version: use whole-wheat spaghetti and reduce the oil to 15 g (about 1 tbsp).
Dairy-free version: replace the milk with vegetable broth or some pasta cooking water.
Gourmet version: add a drizzle of lemon-infused oil and a few fresh thyme leaves before serving.
Kids version: remove the chili and lightly blend the sauce to make it smoother.
