Ingredients

  • 1 1/4 cups strong flour (strong, the type you usually use, like Manitoba)
  • 3/4 cup weak (cake) flour (the weak flour you normally use for cakes)
  • 1 1/3 tsp fresh brewer's yeast
  • 2/3 cup water
  • Half tsp salt
  • 2 tsp lard (or oil)
  • 5.3 oz salami
  • 3.5 oz provola (cheese) (preferably a drier provola or provolone)
  • 1/2 cup grated Parmesan
  • 6 eggs

Steps

For the recipe you can use a ready pizza dough to save time, the kind you find at the bakery or at the supermarket refrigerated counter.

  • Put the flour in a bowl, add the lard, the yeast dissolved in the water and mix, then add the salt and knead well; form a ball and let it rest until doubled (3–4 hours).

  • Boil the eggs for 8–9 minutes. Once the dough has risen, take it and roll it out on a floured surface to form a rectangle about 10 inches wide, then cut 6–8 strips about 3 inches wide.

  • Fill with the salami cut into cubes and the provola (better if dry or provolone), add a sprinkle of Parmesan and roll up to form cylinders.

  • Line a muffin tin or tartlet molds with parchment paper and place part of a cylinder in each cavity, put an egg in the center and then wrap it with the remaining dough cylinder.

  • Make small strips and place them in a cross over the eggs. Bake in a preheated oven at 392°F for 20 minutes.
