The cheese-stuffed savory cake is one of those simple and super-indulgent recipes that really save any occasion! It’s a soft and flavorful savory cake, enriched with lots of cheese and black olives, and the nice thing is that we can customize it with whatever we have in the fridge. I chose cooked ham, but it’s also great with other cured meats like salami or speck, or with grilled vegetables for a vegetarian version. No leavening is required, it takes little time to prepare and it’s perfect to bring to a picnic, for Easter Monday or for a day trip. In short, an easy recipe that always looks impressive! Ingredients
- 2 cups all-purpose flour
- 5 tbsp potato starch
- 3 eggs
- 2/3 cup milk
- 6 2/3 tbsp vegetable oil
- 3 oz grated cheese (half Parmesan and half Pecorino)
- 1 packet baking powder for savory preparations
- a pinch of salt
- to taste pepper
- 4 oz smoked scamorza cheese
- 3 oz provolone
- 2 oz black olives (pitted)
- 4 oz cooked ham
Preparation
Break the eggs into a large bowl and whisk them with a pinch of salt until you get a light and frothy mixture, then slowly pour in the milk and the vegetable oil while continuing to mix.
Add the grated cheese and pepper, then gradually add the sifted flour together with the potato starch and the baking powder, mixing carefully until you obtain a homogeneous, smooth batter without lumps.
Fold in the scamorza cut into pieces, the provolone and the black olives and gently combine with a spatula using upward motions to distribute all the ingredients evenly without deflating the batter.
Butter and flour a 9-inch (22–24 cm) pan, then pour half of the batter and level it with a spatula, arrange the slices of cooked ham on top trying to cover the entire surface evenly and add the remaining batter, leveling again.
Bake in a preheated oven at 356°F (180°C) and cook for about 35 minutes until the surface is nicely golden. Remove from the oven and let it cool slightly before cutting into slices so you get a firmer and cleaner slice.
