- 1.3 lbs ground veal (and pork)
- 1 egg
- 0.3 cups parmesan
- 0.3 cups breadcrumbs
- 2 tsp salt
- as needed milk
- 1 lemon juice (large)
How to Make Lemon Meatballs
In a large bowl, place the minced meat, egg, salt, grated parmesan, breadcrumbs, and milk. Mix well with your hands until all ingredients are combined.
Then take a handful of meat and form small meatballs by rolling them with your hands.
Next, roll them in flour, then place the meatballs in a pan with a drizzle of olive oil, browning them for a few minutes and turning them often to prevent burning.
Deglaze with wine and let it evaporate.
Shortly before the end of cooking, squeeze a lemon and pour the juice into the pan.
Continue cooking for another 5 minutes. Serve with chopped parsley.
