Ingredients

  • 11 oz fresh pasta (stringozzi)
  • 2 artichokes
  • 1 sausage
  • 1 clove garlic
  • 1/2 glass white wine
  • 4 tbsp extra virgin olive oil

Steps

  • Remove the tough outer leaves and the spiny tip.
    Cut in half, remove the inner choke and slice thinly.
    Soak the slices in water with lemon to prevent them from darkening.

  • In a large pan, heat 2–3 tbsp of oil with the crushed garlic clove.
    Add the sausage removed from its casing and broken up, sauté until golden.
    Add the drained artichokes and let them cook for 3–4 minutes to absorb the flavors.
    Deglaze with the white wine and cook covered for 8–10 minutes over low heat, adding a little water if necessary.
    Adjust salt and pepper.

  • Bring a large pot of salted water to a boil.
    Cook the stringozzi following the package times (usually 8–10 minutes).
    Drain them al dente, reserving some cooking water.

  • Pour the pasta into the pan with the artichokes and sausage.
    Toss well over medium heat, adding reserved cooking water if necessary to make the sauce creamy.
    Plate and garnish with truffle or lemon zest for a final touch.
