Ingredients
- 4 cups type 0 flour
- 1 1/2 cup milk
- 6 tbsp butter
- 1 small yogurt cup (~4.4 oz) yogurt
- 3 tsp fresh brewer's yeast
- 3.5 oz scamorza
- 3.5 oz cooked ham
- 3.5 oz olives
- salt

I prepare the dough
First, place the flour, yogurt, yeast and salt in a bowl.
Start kneading and add the milk little by little.
Knead for about 10-15 minutes, until you obtain a smooth and elastic dough that pulls away from the sides.
I add the butter
At this point add the butter little by little.
Continue kneading until it is fully incorporated.
I add the filling
Cut into pieces:
cooked ham
scamorza
olives
Add them to the dough and mix well.
Transfer to the work surface.
I form the little doves
Divide the dough into pieces of about 3.5 oz (100 g).
Shape into balls.
Each ball is then cut in half.
form two little rolls.
Place them in the mold:
one in the center
one on top, overlapped
to create the dove shape.
Proofing
Cover and let rise until nearly to the top of the mold.
Baking
Bake in the oven at 356°F for about 25-30 minutes.
