The quick savory mini colombe without rising are a perfect recipe when I want to prepare a quick, easy and super tasty Easter appetizer. There is no need to wait for rising times: just mix the ingredients and in a short time I bring to the table soft and flavorful mini colombe.

I make them with cooked ham, scamorza and olives, an irresistible mix that everyone always loves. They are perfect for:

Ingredients

  • 2 1/2 cups 00 flour (about 300 g)
  • 1 container (about 125 g / 1/2 cup) Greek yogurt
  • 3 eggs
  • 1/4 cup vegetable oil (about 60 ml)
  • 1/2 cup grated Parmesan (about 50 g)
  • 5.3 oz cooked ham (prosciutto cotto) (about 150 g), diced
  • 5.3 oz scamorza cheese (about 150 g), diced
  • 3.5 oz olives (about 100 g), pitted and chopped
  • 1/3 cup milk (about 100 ml)
  • 1 packet instant baking powder for savory preparations (lievito istantaneo)
  • salt to taste

  • Prepare the batter
    First, crack the eggs into a bowl, add a pinch of salt and whisk them.
    Add the oil and the yogurt and mix well.

  • Pour in the milk and continue mixing.
    Add the dry ingredients
    Add the flour and mix until you obtain a smooth batter.

  • Add the grated cheese and the instant baking powder.

  • Add:
    pepper
    garlic powder
    Mix well.
    🧀 Add the filling
    Cut into cubes:
    cooked ham
    scamorza
    olives
    Add them to the batter and mix thoroughly.

  • Shape the mini colombe
    Pour the batter into the molds for mini colombe (100 g / about 3.5 oz each).
    Fill to about 3/4 of the mold.
    Sprinkle sesame seeds on top.
    Baking
    Bake in the oven at 356°F (180°C) for about 30 minutes, until golden and fluffy.
