Ingredients

  • 6 pork steaks
  • 4 oz scamorza
  • 4 oz mozzarella
  • 4 oz mushrooms
  • salt
  • spices (to taste)

  • Prepare the meat base
    Take the small pork neck steaks and gently pound them with a meat mallet to make them thinner.
    Lay a sheet of parchment paper on your work surface and arrange the steaks side by side, slightly overlapping, to form a compact rectangle of meat.
    Add the filling
    Spread over the meat:
    scamorza in pieces

  • well-drained, squeezed mushrooms and
    mozzarella cut into cubes

  • Form the roll
    Using the parchment paper, roll the meat over itself to form a compact roll.
    Squeeze tightly with the parchment paper to keep the shape.
    Baking
    Bake in the oven at 356°F for about 40 minutes.
    Then open the parchment paper and continue baking for another 10–20 minutes, until the roll is nicely golden on top.
