Ingredients

  • 1 cup + 2 tbsp butter
  • 1 cup (chopped) walnuts
  • 3/4 cup sugar
  • 2 1/2 cups flour

  • Prepare the dough
    In a bowl, start by working the sugar with the softened butter until you obtain a creamy mixture.
    Add the chopped walnuts and the flour.
    Quickly knead until you get a soft and homogeneous dough ball.
    Wrap the dough in plastic wrap.

  • Place it in the refrigerator for about 30 minutes.
    Shape the cookies
    After resting time, roll out half of the dough on a sheet of parchment paper using a little flour to help.
    Flour the cookie cutters and cut out bunny and Easter egg shapes.

  • Arrange the cookies on a baking sheet lined with parchment paper, leaving a little space between each.
    Roll out the remaining dough and cut additional cookies.
    Baking
    Bake in the oven at 356°F for about 15 minutes, until the cookies are lightly golden.
    Let cool completely.

  • Filling
    Once cold, spread on one cookie:
    hazelnut spread or jam as desired
    Cover with another cookie to form filled sandwich cookies.
